TALEGGIO
Boast of ARRIGONI production, characterized by
the brand number CTT7, is considered by the operators of the field the top of the quality.
Its a soft-paste cheese produced exclusively with cows milk, the rind is rosy,
soft and thin, the paste is soft and melting to the palate, the taste is sweet and
delicate with aromatic shadings. Once maturation is reached the taste gets decidedly
spicier.
The origin of the Taleggio is ancient, probably around the X or XI century, even if the
first sure news dates to the 1200.
Since 1988 the Taleggio has been a cheese of Denomination of Origin, while it has obtained
the European acknowledgment of Denomination of Protected Origin in 1996.
The production and the commercialization are controlled and guaranteed by the Association
for the protection of the Taleggio cheese.
Seasoning: min. 35 days.
Weight: available in the formats " high " (kg. 2.2), " low
" (kg 1.8) and shared (from kg. 0.3 to 0.6)
