QUARTIROLO LOMBARDO
Young cheese and high consistency, it is
characterized by its fresh taste. The Quartirolo Lombardo has a thin and soft white rind.
The structure of the paste is united and friable. Optimal with salads.
The ancient origin of the name Quartirolo comes from the fact that the biggest productions
of this cheese were caught up in September and October, the period in which the cows fed
exclusively with quarter grass cut, whose floria composition is particularly loaded with
scents and tastes gives milk and its by-products particular aromas. Today the Quartirolo
Lombardo is not a seasonal product anymore and the production happens during the whole
year.
In 1993 the Quartirolo Lombardo has obtained the Denomination of Origin with 10 DPR May
1993 and in 1996 it has been recognized at communitarian level product to Denomination of
Protected Origin.
As it happens for our other cheeses D.O.P. also the Quartirolo Lombardo is guaranteed by
the Association for the protection of the Quartirolo Lombardo.
